🎉Exciting news from Hidden Springs Creamery!🎉 Amy and I are celebrating our first year as owners of Hidden Springs Creamery!🐑 It's been a wild ride so far, with the addition of new products to our portfolio, including retail lamb, 100% lamb sticks, a smoked 100% lamb sausage infused with Hidden Springs Wischego, and a new line of sheep milk soaps. We are also thrilled to announce the upcoming availability of limited-edition sheepskins, naturally bark-tanned by The Driftless Tannery, as well as our first cured, 100% mutton salami, in collaboration with Driftless Provisions.🍖 In other exciting news, Hidden Springs Creamery received several awards at the recent World Cheese Championships, including 2nd place in the Semi-soft (Semi-hard) Sheep's Milk Cheeses category for our Farmstead Feta, 4th place in the Hard Sheep's Milk Cheeses, Mature (less than 6 months) category for our Wischego, and 6th place in the Surface (Mold) Ripened category for our alpine style cheese Ocooch Mountain! The lethal range for bovine livestock is 95° and 80 percent humidity for 6 hours… the average high for #Tulsa, OK from June 2023 through August 2023 was 92° F, and the Oklahoma Mesonet projects up to a 10° F average temperature increase by 2075 (and most likely much sooner). And in 2023 Tulsa reached a high temp of 105° F (123° Heat Index) on 3 separate occasions, with 17 days above 100° F. As the heat averages rise, and producer insurance rates increase as well as costs/scarcity for livestock feed, it is realistic to assume that there will come a day within this current generation where there will be no beef produced in Oklahoma; within 3 generations - maybe less - there will be children born who will never eat a hamburger. This new reality of #Oklahoma and the whole of the South and Southwest will someday see a climate unable to support commercial bovine production. Imagine that. No beef. No horses. No cowboys… The humble burger that may or may not have been invented here in Tulsa, Oklahoma will no longer be physically or commercially viable for its residents to consume. Ribeyes: bone-in or bone out? Thoughts? I cut my retail ribeyes with the bone included, because grass-only beef runs leaner and my (ahem) extensive experience seems to show better moisture retention, especially when grilling. If I had a fat-a$$ grain-finished animal, I'd go boneless. #beef #retail #grilling #grassfedbeef #texasbeef #qualityproducts #qualitymeats
