As amazing as they are these Triple Chocolate Cupcakes are actually really simple to make. They start with a box of chocolate cake mix that is doctored up with a few added ingredients to make it extra moist and fluffy. After the cupcakes have baked and cooled you cut a small core from the middle of each. You fill that hole with a creamy dark chocolate ganache made from finely chopped dark chocolate and hot heavy cream. You fill the hole right up to the top of the cupcake and smooth it over.

While the ganache cools and sets inside the cupcake you make the white chocolate frosting. Guys, this may be the best buttercream frosting I’ve ever made. It is a combination of butter, powdered sugar, and melted white chocolate and it comes out so light and fluffy. Once the frosting is ready you pipe it on top of each cupcake and then garnish with a little gratedchocolate if you like.

The batter came our thick and it was hard to pour. I used a mixer to mix it up should I have hand stirred? Or did I need more oil?

The cake batter did not turn out to right consistency. Don’t know why since all instructions were followed exactly.
With batter like thick brownie mix, yields maybe 21 cupcakes.
Seems to be a consistent problem with this recipe as others have commented on it.Triple Chocolate Cupcakes (8)

Hi Kat (great name! ;)) The batter is thick because of the pudding. It is not thin and pourable. You spoon it into the cupcake tins and it bakes up into a moist, delicious cupcake. We got 24 cupcakes out of ours but that always varies slightly depending on who is doing the filling :).

Can the icing be frozen and rewhipped to use at a future date?

    • Melinda February 12, 2024 @ 12:01 pm Reply

Hi Aimee, yes the frosting can be stored in an airtight container in the refrigerator for 2 weeks and can be frozen for up to 6 weeks. Bring back to room temperature and re-whip before using.
